Maple, Sriracha, and Bacon Pumpkin Seeds

Halloween is over, but pumpkin fever is still holding strong. My mouth is watering at the thought of delicious pumpkin pie on Thanksgiving! But before moving too far forward, I must acknowledge an unfulfilled promise that I made in October regarding a pumpkin seed recipe. I even posted a picture of fresh pumpkin seeds on Facebook to tease all of you. That was Oct. 14… tick tock…

Bacon and Maple Pumpkin Seeds

So what happened? Well, the truth is….. I burnt the ever loving sh*t out of them.

My first-ever attempt at baking pumpkin seeds left me scrambling on Amazon for some replacement seeds – sorry ya’ll, I wasn’t even about to dig my way through another pumpkin again.

Thank goodness for Amazon Prime and a 2 lb. bag of seeds, because I’ve finally succeeded! I’m in love with this recipe and the flavors of maple, bacon, and sriracha are an addictive combination.

If you decide to go nuts like me and buy a ton of seeds, consider packaging them in a few mason jars and gifting them for your friends and family to celebrate the season! It is the season of giving for a reason, wink!

Maple Sriracha Pumpkin Seeds

Maple Sriracha Pumpkin Seeds

Ingredients

  • 1 1/2 cups pumpkin seeds, cleaned
  • 1 tbsp bacon drippings, melted
  • 1 tbsp sriracha
  • 1 tbsp pure maple syrup
  • 1 tsp kosher salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. Preheat oven to 325°.
  3. Bring a pot of water to a boil and sprinkle in salt.
  4. Add the pumpkin seeds to the pot and boil for about 8 minutes or until they begin turning grey.
  5. Drain the seeds and pat dry with paper towels.
  6. Dump the boiled seeds in a medium-sized bowl.
  7. Add the bacon drippings, sriracha, and maple syrup. Mix together until well combined.
  8. Spread the mixture evenly on the baking sheet and bake for 30-40 minutes.
  9. While the seeds are cooking, frequently mix them on the baking sheet to make sure they bake evenly.
  10. Take them out of the oven when they turn golden brown.
  11. Sprinkle the seeds with extra salt and enjoy!
