Halloween is over, but pumpkin fever is still holding strong. My mouth is watering at the thought of delicious pumpkin pie on Thanksgiving! But before moving too far forward, I must acknowledge an unfulfilled promise that I made in October regarding a pumpkin seed recipe. I even posted a picture of fresh pumpkin seeds on Facebook to tease all of you. That was Oct. 14… tick tock…
So what happened? Well, the truth is….. I burnt the ever loving sh*t out of them.
My first-ever attempt at baking pumpkin seeds left me scrambling on Amazon for some replacement seeds – sorry ya’ll, I wasn’t even about to dig my way through another pumpkin again.
Thank goodness for Amazon Prime and a 2 lb. bag of seeds, because I’ve finally succeeded! I’m in love with this recipe and the flavors of maple, bacon, and sriracha are an addictive combination.
If you decide to go nuts like me and buy a ton of seeds, consider packaging them in a few mason jars and gifting them for your friends and family to celebrate the season! It is the season of giving for a reason, wink!
